Adelicious gluten appetizer for any occasion.  You can do most of the prep ahead of time and finish presentation when you are ready to serve.  Once you have had one, you will have a hard time resisting the temptation to pop another one in your mouth.  These sweet potato poppers have a great mix of sweet, savory, crunchy and creamy.  They are also very versatile; mix up the toppings for a variety and for a colorful presentation! “

INGREDIENTS

  • 1-2 sweet potatoes, washed thoroughly
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)
  • 1/4 teaspoon black pepper
  • sea salt, to taste
  • 1/3 cup feta cheese
  • 1/4 cup sour cream
  • 1 teaspoon garlic
  • 1 teaspoon oregano
  • 4 strips of cooked bacon

DIRECTIONS

  1. Preheat oven at 400 degrees.
  2. After thoroughly washing your sweet potatoes, slice in 1/8 inch think  slices as uniformly as possible.
  3. Put potato slices in a bowl, pour in olive oil, rosemary, black pepper, and sea salt.
  4. Cover bowl with a plate and shake vigorously for 30 seconds.  This should coat all potato slices evenly.  If they do not seem coats well enough, re-cover and shake another 15-30 seconds.
  5. Lay potato slices in a single layer on a baking sheet and bake in the oven for 30-40 minutes, until golden brown.  Flip slices half way through cooking time to have an even color on both sides.
  6. Remove from oven when desired golden brown is achieved.  Let cool slightly.
  7. In a small bowl, combine feta cheese, sour cream, garlic, and oregano.  Mix well until smooth.
  8. Arrange potato slices on serving dishes.  Lightly sprinkle with a little sea salt.
  9. Put a dollop of the feta sour cream mixture on each slice.
  10. Top with a few bacon crumbles each.
  11. Sprinkle the remainder of finely chopped rosemary to add visual appeal, along with a few twists of fresh ground pepper and serve.

Chef Notes:  

You can use russet potatoes, orange sweet potatoes or the yellow/white sweet potatoes.  The white sweet potato has mild sweet notes that pair well with spicy and savory.  Since it looks similar to a regular potato, it can be a pleasant surprise to unsuspecting guest.

Using a homemade “potato popper” is a great, inexpensive, gluten free alternative to a typical cracker.  Make them ahead of time for easy preparation.  These yummy little morsels are also great served warm from the oven with dip!
