This gluten free Amish Cinnamon Bread is so good!  Moist, cinnamon-y goodness.  Perfect to have with a cup of coffee on a beautiful morning while watching the sunrise.  This recipe is a friendship recipe to share the love with others.”

 

INGREDIENTS

Starter

  • 2 ¼  cups brown rice flour
  • ¾ cups potato starch
  • ¼ cup plus 2 Tbsp. tapioca flour
  • 3 cups whole Vit. D milk
  • 3 cups sugar

Batter

  • 1 cup butter, olive oil, or coconut oil
  • 3 eggs
  • ½ cup rice milk
  • 1 teaspoon vanilla
  • 1 ½ cups brown rice flour
  • ½ cup potato starch
  • ¼ cup tapioca flour
  • 1 ½ teaspoon baking powder
  • 2 teaspoons cinnamongluten free cinnamon bread3
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup gluten free instant vanilla pudding
  • topping:  1/3 cup sugar  and 1 teaspoon cinnamon


DIRECTIONS

Directions for Starter

  1. Day 1 add ¾ cup brown rice flour, ¼ cup potato starch, 2 tablespoons tapioca flour, 1 cup milk, and 1 cup sugar to a gallon Ziploc bag. Seal bag and then mush it all together and then set out on the counter.**Follow below for the next 10 days.**
  2. Day 2 “Mush” bag once during the day.
  3. Day 3 “Mush” bag once during the day.
  4. Day 4 “Mush” bag once during the day.
  5. Day 5 “Mush” bag once during the day.
  6. Day 6 Add to the bag: ¾ cup brown rice flour ¼ cup potato starch 2 tablespoons tapioca flour 1 cup milk 1 cup sugar.
  7. Day 7 “Mush” bag once during the day.
  8. Day 8 “Mush” bag once during the day.
  9. Day 9 “Mush” bag once during the day.
  10. Day 10 Squeeze batter out of bag into a large bowl, add: ¾ cup brown rice flour ¼ cup potato starch 2 tablespoons tapioca flour 1 cup milk 1 cup sugar.
  11. Stir thoroughly and then add 1 cup of the starter batter to 4 ziploc bags. Keep one for your next batch and give away a bag and a recipe to 3 friends. Or bake 3 more loaves and freeze. (freezes really well).

Directions for Batter

  1. To the approximate 1 cup of batter left in your bowl add 1 cup oil, ½ cup rice milk, 3 eggs, and vanilla.
  2. In another bowl mix 1 ½ cups brown rice flour, ½ cup potato starch, ¼ cup tapioca flour, 1 cup sugar, baking powder, cinnamon, salt, baking soda, and instant vanilla pudding.  Pour into thgluten free cinnamon breade batter and mix well.
  3. Mix together 1/3 cup sugar and 1 teaspoon cinnamon in a small bowl.
  4. Preheat oven 325 degrees.  Butter 2 loaf pans and sprinkle them with half of the cinnamon sugar.  Pour in batter and sprinkle the rest of the cinnamon sugar on top.  Bake for 60-70 minutes or until done.
