The combination of the Dijon, orange, and chardonnay with the crunchiness of fried bread crumbs gives this wonderful halibut dish it’s savory blend of delicate flavors.  Make it “just for the halibut”, you will not be disappointed.”

 

INGREDIENTS 

  • 2 wild halibut filets
  • 1 tablespoon honey Dijon mustard
  • 2 cups gluten free bread crumbs
  • 2 tablespoons diced chives
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced

Butter Sauce Ingredients

  • 1/4 cup chardonnay
  • 2 tablespoons butter
  • 2 oranges juiced
  • pinch salt

DIRECTIONS

  1. Brush a small amount of Dijon mustard on one side of the halibut.  Then coat the Dijon side with breadcrumbs and chives.
  2. Heat a skillet on medium heat.  When hot, add olive oil.  Once olive oil is hot place halibut in skillet breaded side down.  Cook until brown and turn over.  Add butter and garlic to the skillet and cook halibut until done.  Place the halibut on a serving platter, breaded side up.
  3. In the same skillet make the butter sauce.  Add chardonnay, butter, orange juice, and salt.  Cook down on medium heat for 5 minutes.
  4. Pour butter sauce over the halibut and serve.

Chef Notes:

*I make my own bread crumbs by drying gluten free bread slices in the oven and then crushing them into crumbs with a rolling pin.  It is really easy, give it a try!  If you want to have some on hand, you can also purchase ready-made gluten free breadcrumbs like Kinnikinnick’s Gluten Free Bread Crumbs  but I would try the homemade ones first.
