The first time we enjoyed this meal was after a long hike to the top of Cinder Cone in Lassen National Park.  We were hungry, so I am certain anything would have tasted good, but this was over the top.  The word “Fantastic” kept coming out of our mouths as we shoveled more in.  our good friend, Diane introduced us to this glorious simplistic recipe.  It is sure to impress your guests and leave you feeling spoiled.  It is so easy, you can even make it on a campfire.  Talk about “glamping” (glamorous camping)!  Who knew five ingredients together could be so good?  Or should I say FANTASTIC!?!  Give it a try yourself.  (I dare you to try not and mutter the word ‘fantastic’ while feasting.)  If you want to spoil yourself while camping, see the chef notes for the slight cooking modification to do it over a fire.”

 

INGREDIENTS

  • 1 lemon
  • 1 stick of butter
  • 1-2 Lbs of Large Shrimp (shelled, deveined, tail-on)
  • 2 cloves garlic, minced (optional)
  • 1-2 teaspoons Oregano (optional)
  • Salt and pepper, to taste (optional)

DIRECTIONS

  1. Preheat oven to 375 degrees.  (See instructions below if cooking over a campfire.)
  2. Cut lemon into slices.
  3. Cut stick of butter into several “pats” of butter.
  4. Spread pats of butter out in single layer at the bottom of a glass casserole dish.
  5. Remove shrimp shells and de-vein if needed.
  6. Lay raw shrimp in a single layer on top of butter.
  7. If desired (but not necessary!) sprinkle shrimp with minced garlic, oregano, salt and pepper.
  8. Cover shrimp with lemon slices.
  9. Put in oven.  Cook for 10 minutes.  Shrimp should be opaque all the way through.  Lemon-butter suace will be hot and bubbly.  Important not to over cook.

hef Notes:   

To prepare this dish on a campfire or the BBQ, simply lay tin foil out.  Lay down pats of butter and shrimp.  Season and cover with lemons.  Wrap tin foil into a packet.  Use a 2nd (and third if it is think foil) sheet of tin foil to reinforce the packet and ensure that it contains all the juices.  Put on rack above campfire for 10-15 minutes.  Check shrimp carefully at 10 minutes.

Serve over Thai Jasmine rice.
