Mediterranean Spaghetti is a wonderful alternative to traditional spaghetti.  I call it my summer spaghetti, using spices and tomatoes from my garden this dish has an infusion of flavor.  Each element of this fare plays it’s own piece and then comes together at the end with a finale so savory that it demands an encore.  So good and gluten free.”

 

INGREDIENTS 

  • 8 ounces uncooked brown rice penne pasta or brown rice spaghetti
  • 1 tablespoon olive oil
  • ½ pound ground turkey
  • ½ onion chopped
  • 4 garlic cloves minced
  • 1 teaspoon dried oregano
  • ½ cup dry red wine
  • ½ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon black pepper
  • 2 large tomatoes or 14.5 ounce can stewed tomatoes
  • ¼ cup brown rice flour
  • 1 ¾ cup rice milk
  • 1/8 teaspoon nutmeg
  • 1 cup feta cheese
  • 4 tablespoons grated parmesan cheese
  • 1 egg
  • 2 tablespoons dry gluten free bread crumbs

DIRECTIONS

  1. Preheat oven @ 375 degrees.
  2. Cook pasta according to instructions on package.  Drain and toss a small amount of olive oil in pasta to keep it from sticking.
  3. Heat olive oil in a skillet on medium.  Add turkey and brown.  Add onion, garlic, and oregano and cook for 5 minutes.  Add wine, salt, cinnamon, nutmeg, pepper and tomatoes and bring to a boil.  Reduce heat and simmer for 10 minutes.
  4. In a sauce pan add flour, milk and nutmeg and bring to a boil.  Reduce heat and simmer to thicken, about 7 minutes.  Remove from heat and stir in feta and parmesan.  Whisk egg in a small bowl and slowly add a cup of heated milk/flour mixture while whisking to temper the egg.  Add egg mixture to the milk/flour mixture and mix well.
  5. Oil a 2 quart casserole dish and spread 2 tablespoons of bread crumbs on the bottom.  Add 2 cups of pasta to the casserole dish followed by 2 cups of ground turkey mixture and 1 cup of sauce.  Repeat layers and top with remaining bread crumbs and parmesan cheese.
  6. Bake for 30 minutes or until browned.

Chef Notes:

*We like to use brown rice penne pasta but it works great with brown rice spaghetti noodles too!
