Grilled Stuffed Zucchini Boats

Ever tried zucchini boats on the barbeque?  You are in for a treat.  Our grilled stuffed zucchini boats are healthy and delicious!  Your kids will go crazy over them, spaghetti in a boat!”



  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 10 zucchinis cut in half lengthwise
  • ½ onion diced
  • 3 cloves garlic minced
  • 1 can 15 ounce tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon garlic salt
  • 1 cup cooked rice or quinoa
  • Shredded cheddar cheese (optional)


1.  Heat oil in a skillet on medium heat.  Add ground turkey and cook until browned.

2.  While cooking ground turkey add a small amount of water to the bottom of another skillet and then

place zucchinis cut side down in the pan and cover.  Cook zucchini on medium heat until almost done.bbq suffed zucchini Photoshop 2

You want it just done enough to be able to scrape out the inside.  Allow to cool.

2.  Add onion and garlic to the skillet with cooked ground turkey and cook until tender.

3.  Once cool, scrap out the inside of the zucchinis and add what you scrapped out to the skillet.

4.  Add the rest of the ingredients tomato sauce through salt to the skillet and bring to a boil, cook for 5bbq suffed zucchini photoshop

minutes. Take off heat and add rice or quinoa.

5.  Place zucchinis on a cookie sheet and fill each one with the meat sauce.

6.  Top with cheese if dairy free is not what you are looking for and place on grill.  BBQ for about 20 minutes or until done.
