Creamy, dreamy buttermilk mashed potatoes!  These light and fluffy mashed potatoes take me back to a simpler time, a time of making mashed potato/butter volcanos and laughing with the cousins at the “kids table”.  A great compliment to your holiday meal or weeknight dinner. “

 

INGREDIENTS 

  • 7 large red potatoes peeled
  • 1 tablespoon butter
  • splash of buttermilk
  • salt and pepper to taste

DIRECTIONS

1.  Boil potatoes in water until soft in the middle when stuck with a fork.

2.  Drain potatoes and add to a large bowl.

3.  Add butter, salt and pepper.   Pour in just enough buttermilk (about ½ cup) until desired consistency. Mash with a hand-held potato masher.
