DIRECTIONS
1. Chop spinach and bell pepper.
2. Heat oil in a skillet on medium heat. Add broccoli slaw, spinach, bell pepper and garlic. Cook until just tender.
3. Add salsa. Beat egg and then add to skillet. Scramble egg and veggies together and continue to cook until egg is done.
Serve with sliced avocado and salsa fresca

*This is one of my favorite breakfast meals after exercising. Not only is it a super easy and quick meal to make but it is very nutritious as well. The egg provides protein for muscle repair. Spinach increases muscle growth. Avocados replenishes the body with healthy calories. Bell peppers and broccoli are great antioxidants. Garlic promotes healthy blood circulation and is a great antioxidant. Onions protect your heart. All of these veggies also have many other health benefits as well. And, all of these ingredients provide energy for the body so that you can breeze through your day. Be creative come up with your own combinations, add your own veggies, the possibilities are endless!
