INGREDIENTS
DIRECTIONS
1. Heat oil in a stock pot over medium heat. Add onion, and garlic; sauté over low to medium heat for 5 minutes, until tender.
2. Add avocado, spinach, broth, parsley, celery, garlic salt; bring to a boil. Reduce heat to simmer and cook covered for 10 minutes, until spinach is cooked.
3. Remove from stove and puree in a blender. Salt more if needed. Top with shredded pepper jack cheese.
