Chef Notes:
Yum! Great snack anytime. When your kids aren’t looking, sneak in a handful of spinach. They won’t taste it; a great way to pack in a few more vitamins and minerals.
Fresh raspberries are also good but you may lose some of your thickness. Throw in a handful of ice cubes to thicken it up.
There are so many reasons you and your family should be eating more raspberries! Besides they are super delicious! In the health community, raspberries are known for their cancer preventing and inhibiting abilities. This is mainly due to their high levels of ellagic acid. They also have high levels of Anthocyanins, which is gives them their pretty red color. Anthocyanins are said to be beneficial to the circulatory system, strengthening veins as well as protecting your body against dementia and heart disease. On top of all that they serve up a good dose of manganese, folic acid, vitamin C, B vitamins, magnesium and iron!
For more info on the health benefits of raspberries go to The Oregon Raspberry and Blackberry Commission.
