Delicately flavored, this roasted lemon chicken will send your tastevbuds into a swell of savory essence.”

 

INGREDIENTS

  • 1 whole organic chicken
  • 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon granulated garlic
  • 2 teaspoons dried oregano
  • ¼ teaspoon ground pepper
  • sea salt (just enough to cover the chicken on top)
  • ¼ cup dry white wine

DIRECTIONS

  1. Preheat oven @ 375 degrees.
  2. Rinse the chicken inside and out thoroughly and lay in a roasting pan breast side down.
  3. Cut the lemon in half.  Squeeze half of the lemon over the chicken and slice the other half and set aside.
  4. Brush olive oil all around the chicken.  Sprinkle; garlic, oregano, ground pepper and sea salt over the chicken.
  5. Add wine to the bottom of the pan and set in oven.
  6. Cook for 1 hour or until done.
  7. Lay slices of lemon top of the chicken and serve.
