A scrumptious, moist pork tenderloin full of flavor! This could be the star of a special occasion dinner or just a weeknight treat because you deserve it. Either way, you will thank yourself for trying it out.”
DIRECTIONS
- Cook 5-6 pieces of bacon until crisp. Remove from pan, let bacon rest on paper towels. Chop bacon into small pieces once cooled. Save bacon grease in pan to be used to brown the pork tenderloin before putting it in the oven.
- Preheat oven to 450 degrees.
- Remove fat and sinew. (This step should not be skipped. Removing the fat and sinew is vital to a tender tenderloin.)
- Butterfly the pork tenderloin by cutting down the middle but not all the way through.
- Pound the pork tenderloin with a meat mallet to flatten and make stuffing/rolling easier.
- Lay arugula down the middle of the pork tenderloin.
- Spread goat cheese on top of arugula, doing the best job to spread it evenly from end to end.
- Sprinkle pecan pieces and bacon the length of the pork tenderloin.
- Roll the flattened pork back up and wrap with kitchen twine to prevent it from unrolling.
- Once tenderloin is secured into a roll, heat bacon grease on medium to high heat. Pat the pork tenderloin dry with a paper towel removing moisture, allowing the tenderloin to brown nicely in the bacon grease.
- Once the grease is heated, carefully transfer the wrapped porl into the heated pan. Brown on all four sides.
- Transfer to a baking dish big enough for the tenderloin. sprinkle with freshly cracked pepper and put in preheated oven.
- Cook for 15 minutes.
- Pour 2 tablespoons of melted butter over the top.
- Continue to cook for 15 more minutes or until meat has reached 165 degrees.
- Remove pork from oven, let rest 5 minutes. Cut in inch thick slices.
- Serve on a platter with Robert Rothchild’s Roasted Pineapple and Habenero Sauce.
- Serve immediately and start to wonder why you only made one.

* The combination of the sweet and spicy sauce with the creamy goat cheese and bacon goodness is amazing. A wonderful choice for Sunday night family dinner or company. The combination of removing the sinew, searing the pork in the bacon grease and dousing the pork with a little butter ensures a tender, moist dish.
