1. Heat a skillet over medium heat, add olive oil and then brown ground turkey. Add re-fried beans and mix together well.
2. Coat bottom of crock pot with olive oil. Add crushed chips to cover bottom.
3. Mix Rotel chilies, sour cream, salsa chili powder, and onion in a separate bowl and blend well with a whisk.
4. Layer half of the beef mixture over the chips, then half of the sour cream mixture over the turkey burger, ending with half the cheese over the beef. Repeat these layers once more beginning with chips and ending with cheese.
5. Cook on high for three hours. Or on low for 6 hours
Chef Notes:
Did you know cheeses bought outside the US are more likely to be from animals that are free range and pesticide free? This produces a higher “good fat” cheese, high in omega 3s. Also they are usually more tolerated by those that have dairy intolerances or allergies.
