INGREDIENTS
DIRECTIONS
1. In a large stock pot add the left over turkey carcass including giblets and any juices. Cover with water. Bring to a boil, cover, reduce to a simmer and cook for 1 hour.
2. Take all bones and turkey meat/pieces out of the turkey broth. Allow to cool. Once cool, remove all meat from the bones and discard the bones. Add the meat back to the broth.
3. Heat olive oil in a medium size pot. Add onion, garlic, celery if using fresh, basil, pepper, parsley, oregano, salt, and garlic powder. Cook on medium heat until onion is soft. Add to broth. Add some broth to the medium size pot to rinse all spices out to add to the broth.
4. Bring broth to a boil, reduce heat to a simmer, cover and cook for 30 minutes.
5. Serve
