INGREDIENTS
DIRECTIONS
1. Preheat oven @ 375 degrees F.
2. In a large bowl mix ground turkey, corn chips, cumin, chili powder, oregano, parsley, egg, 1/2 cup salsa, pepper and 1/2 cup cheddar cheese. Place into a baking pan and form into an oval.
3. In a small bowl mix 1/4 cup salsa and re-fried beans. Spread salsa and re-fried bean mixture onto the top of the meatloaf.
4. Place in oven and cook for 1 hour or until fully cooked. Add cheese to the top and cook in the oven for about 10 more minutes to melt the cheese.
5. Remove from oven and top with olives, green onions, sour cream, and cilantro.
