This Gluten Free Cinnamon Bread is so good! Moist, cinnamon-y goodness. Perfect to have with a cup of coffee on a beautiful morning while watching the sunrise.”
INGREDIENTS
- 3 eggs
- 2 1/2 cups sugar
- 2 cups rice milk
- 1 cup butter, olive oil, or coconut oil
- 1 teaspoon vanilla
- 2 3/4 cups brown rice flour
- 1 cup potato starch
- 1/2 cup tapioca flour
- 1 ½ teaspoon baking powder
- 4 teaspoons cinnamon
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 cup gluten free instant vanilla pudding
- topping: 1/3 cup sugar and 1 teaspoon cinnamon
DIRECTIONS
- Mix eggs, sugar, milk oil, and vanilla in a mixing bowl.
- In another bowl mix together brown rice flour, potato starch, tapioca flour, baking powder, cinnamon, salt, baking soda, and instant vanilla pudding. Add to egg mixture and mix in well.
- Mix together 1/3 cup sugar and 1 teaspoon cinnamon in a small bowl.
- Preheat oven 325 degrees. Butter 2 loaf pans and sprinkle them with half of the cinnamon sugar. Pour batter into each of the loaf pans and sprinkle the rest of the cinnamon sugar on top. Bake for 1 hour 30 minutes or until done in the middle.
