A few years back we were visiting relatives in Southern California. One evening to show our appreciation for their hospitality, we prepared a Mexican style dinner for them. You know how it is trying to cook in someone else’s kitchen? You are a little off kilter; can’t find quite what you are looking for, completely out of your comfort zone, and trying to appear like you know what you are doing! You don’t know where they keep anything, especially their spices.

Thinking the usual to myself, “now if I were seasoning where would I be?” I was looking for the typical things you’d add to a Mexican dish like cumin, chile powder, paprika, garlic powder etc. When I asked if they had any of these spices they replied “We don’t need them! The Mexican dishes were superb and bursting with maximum flavor! I was converted! They put it on everything, even their scrambled eggs in the morning. It has just the right amount of spice and flavor.
