DIRECTIONS
1. Add chicken carcass to a pot and add enough hot water to cover it. Bring to a boil, cover, reduce heat to simmer and cook for 1 ½ hours.
2. Take chicken out and cool on a plate.
3. Heat olive oil in a skillet on medium heat. Add onion, garlic, celery, carrot and cook until almost done. Add seasonings and cook until the vegetables are tender. Add a small amount of broth to the skillet and pour everything into the broth.
3. Pick meat off of bones and add to the broth.
4. Bring to a boil, reduce heat and simmer for ½ hour.
