Grandma’s Baked Apples

Cozy up with a baked apple on a fall afternoon.  Such an easy treat the kids will love and your house will smell amazing.  Add a scoop of organic vanilla ice cream with a few sprinkles of cinnamon for a classic, decadent dessert to share with company. ”   

 

INGREDIENTS 

  • 4 apples (Granny Smith, Jonagold, Red Delicious, all good.  Try different ones to find your favorite or mix them to make a beautiful display)
  • 1/4 cup pecans, chopped
  • 1/4 teaspoons nutmeg
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 4 teaspoons butter
  • 1/2 cup boiling water

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. Wash apples thoroughly.
  3. Carefully remove 3/4th of the apple core and all seeds, leaving the bottom 1/4 of the core to hold the cinnamon sugar mixture.
  4. In a small bowl, mix chopped pecans, nutmeg, brown sugar, and cinnamon.
  5. Scoop brown sugar mixture into each apple.bakedApples_before
  6. Put one teaspoon of butter on top of each apple.
  7. Place in a baking dish.
  8. Pour 1/2 cup of boiling water in bottom of baking dish.  (This will mix with the buttery, sugary, apple goodness that will seep from the apples making a wonderful sauce to pour over the apples before serving.)
  9. Cook apples in oven for 35-45 minutes.  They should be very soft to the touch.
  10. Cool for 5-10 minutes before serving.  The juices will be very hot.

Chef Notes:

* An apple corer that is easy to control works great for this recipe.  However, do your best not to cut through the bottoms of the apples.   We use a small knife to start coring and a grapefruit spoon to finish.  Seems to work well.

Try different apples.  We love the sweet-tartness of the Granny Smith apples but love how the Red Delicious hold together better.  Simply pop it in the oven before you sit down to dinner.  Serve with a small scoop of organic premium vanilla bean ice cream with a spoonful of sauce and a light dusting of cinnamon for an easy, but sophisticated dessert.
