Pan Seared Salmon with Tangy Avocado Sauce

Melt in your mouth pan seared salmon with a tangy smooth avocado sauce you will love. This is a family favorite.  It is one of the recipes I go to when I want something healthy but super quick.  Throw some rice in the rice cooker and put together a quick garden salad.  A healthy, restaurant-worthy dinner in 25 minutes! “

 

INGREDIENTS 

  • 2 salmon fillets, thin to medium thickness (double recipe for family of 4-5)
  • sea salt
  • 1-2 tablespoons m=macadamia nut oil (grapeseed oil or extra virgin olive oil will also work)
  • 1 avocado, mashed
  • 1/3 cup sour cream
  • 1 lime, juiced
  • 1 teaspoon jalapeno, finely diced, optional
  • 1 teaspoon cilantro, finely diced
  • 1/4 teaspoon garlic powder
  • fresh ground pepper to taste

DIRECTIONS

Pan-sear Salmon

  1. Rinse and pat dry salmon fillets.
  2. Lightly season with sea salt.
  3. Heat 1-2 tablespoons of Macadamia Nut Oil in a pan on medium to high heat.
  4. Once oil is hot, lay fillets in pan gently.  They will spit and steam a bit.
  5. Let cook for 5-7 minutes, you want the underside to be well browned.
  6. Flip fillets over for another 3-5 minutes depending on thickness.
  7. Remove fillets as soon as you feel they are cooked through or almost so if they will be sitting for a few minutes.  They will continue to cook after you remove from heat and it is better if they do not get over cooked

Make Tangy Avocado Sauce while salmon is cooking

  1. Mash avocado in a bowl.  Mix in 1/3 cup of sour cream.  Add juice of 1/2 of a lime (save the other half in case you need it), jalapeno and cilantro if desired (not necessary for a luxurious sauce) garlic powder, sea salt and fresh ground pepper, to taste.
  2. Whip for 30 seconds with a fork.
  3. Add additional lime juice if needed or an additional tablespoon or two of sour cream depending on the consistency y0u are looking for in your sauce.  Whip for another 15 seconds.
  4. Enjoy artistically over the top or present in a ramekin on the plate for dipping.

Chef Notes:

*This recipe is Paleo-friendly without the sauce.  To also enjoy the sauce and stay loyal to your Paleo diet, simply substitute the sour cream with a dairy free substitute.

We love this recipe for those busy weekday nights, but I would not think twice about serving it to company I wanted to impress.  The Macadamia Nut oil adds a great hint of nutty flavor, it pairs excellently with the salmon.  Its naturally high smoke point makes Macadamia Nut Oil great for anything you want to sear.
