Leftover Thanksgiving Casserole

“There is always something for which to be thankful”

…….for one is leftovers!

The hustle and bustle of Thanksgiving is rewarding in itself.  Visiting with family, enjoying good food, and giving thanks for the blessing of the harvest and of the preceding year.  It is indeed a special time.  With this diligent time you are also probably seeking relaxation and easy to prepare meals after the holiday.  Wondering what you can make with the leftovers?  We have a dish that is not only delicious but super easy to make and leaves you plenty of time to put your feet up and relax.

Leftover Casserole has been a favorite in our family for years.  Not only is it an easy time saving meal but also all of the flavors of the previous Thanksgiving meal mix together, making a savory dish to enjoy.

1. Preheat oven @350 degrees.images

2. Oil the bottom of a casserole dish.

3. Layer leftover mashed potatoes, turkey, stuffing and gravy and end with stuffing.

4. Place in oven.  Cover with foil and cook for a half hour, uncover and cook for 15 minutes or until stuffing is crisp on top.

5.  Now go get a good book and put your feet up.  You have had enough on your plate (pun intended), it is time to relax!

6.  Serve with leftover dinner rolls and cranberry sauce, if there is any left.
