One of the wonders of summer: Heirloom Tomatoes!  Beautiful vibrant colors and a thick, almost meaty consistency, these tomatoes hold their own in this simplistic side dish.  Truth be known, I can easily make a meal out of these.  Paired with a dry red wine and I am in heaven!”

 

INGREDIENTS 

  • 3-4 large heirloom tomatoes, sliced 
  • 1/3 cup Feta cheese crumbles
  • 1/4 cup unsalted sunflower seeds
  • Fresh ground pepper, to taste
  • Sea salt, to taste

DIRECTIONS

1.  Slice heirloom tomatoes into thick slices.

2.  Arrange on a serving plate.

3.  Sprinkle Feta cheese and sunflower seeds even over heirloom tomatoes.

4.  Lightly sprinkle sea salt and fresh ground pepper, to taste.

5.  Take in the beautiful sight 🙂  before enjoying this wonderful taste of summer!

Chef Notes:

This side dish was a creation that came out of one of our afternoon trip’s to a local winery.   At the time (not sure if they still do) grew much of their organic produce that was used in the restaurant.  I had remembered the amazing Heirloom tomatoes my husband had had on a sandwich he had ordered and asked our server if it was possible to just get a plate of their amazing tomatoes.  I think she thought I was a little crazy, but ten minutes later she arrived with this beautiful plate of tomatoes that more than met my expectations.  The only different between my recipe and theirs, was a drizzle of olive oil.  it was good, but I didn’t feel it was necessary.  I prefer simplicity whenever possible.  But you be the judge – try it both ways!

*To make this Paleo friendly leave off the Feta cheese.
