Deviled Eggs with Greek Yogurt

Always a crowd-pleaser.  You will not believe these deviled eggs are made with Greek yogurt instead of mayo.  These would make a great protein packed snack for mid-day or to send to school with the kids.”


INGREDIENTS

  • 7 eggs
  • 3 tablespoons Greek yogurt
  • ½ teaspoon mustard
  • ½ teaspoon apple cider vinegar
  • Salt and pepper

 

>>DIRECTIONS

1.  Place eggs in a pot and cover with cold water.  Place on stove and boil on medium heat for 20 minutes.

2.  Take pot off of heat, pour out hot water and run cold water over eggs to cool off.  Take shells off of eggs.

3.  Cut each egg in half lengthwise and scoop out yolk into a small bowl.  Add Greek yogurt, mustard, vinegar, and then salt and pepper to taste.   Mash with a fork.  Mix well.

4.  Add yolk mixture back into each egg half.  Add salt and pepper on top.
