Zucchini patties are a staple at our house.  A delicious way to get your veggies and so easy to throw together on even the busiest of days.  Pairs great as a side with roasted chicken, steak, and Asian dishes.”


  • 3 zucchinis
  • 2 eggs
  • 1/4 tsp. sea salt
  • 1/8  tsp. pepper
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 1/8 tsp. paprika
  • 1 Tbsp. olive oil


1.  Shred zucchini with a grater and add to a large bowl.

2.  Add egg, salt, pepper, and dried basil and mix well.

3.  Heat oil in a frying pan on medium high heat.

4.  drop by spoon full into pan and fry on each side until browned.

5.  Serve with your favorite dish.
