Every year we look forward to making a huge pot of turkey soup right after Thanksgiving.  Very easy to make, just be sure to save the turkey carcass, giblets, and juices from dinner.  All of the savory juices from your Thanksgiving turkey and soup spices meld together to make an enjoyable and satisfying soup.”



  • turkey carcass and juices
  • water
  • extra virgin olive oil
  • 1/2 yellow onion chopped
  • 6 cloves garlic minced
  • 1 tablespoon dried celery or 1 stalk fresh celery chopped
  • 1 teaspoon dried basil
  • 1 teaspoon black pepper
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 bay leaf


1.  In a large stock pot add the left over turkey carcass including giblets and any juices.  Cover with water.  Bring to a boil, cover, reduce to a simmer and cook for 1 hour.Turkey Soup

2.  Take all bones and turkey meat/pieces out  of the turkey broth.  Allow to cool.  Once cool, remove all meat from the bones and discard the bones.  Add the meat back to the broth.

3.  Heat olive oil in a medium size pot.  Add onion, garlic, celery if using fresh, basil, pepper, parsley, oregano, salt, and garlic powder.  Cook on medium heat until onion is soft.  Add to broth.  Add some broth to the medium size pot to rinse all spices out to add to the broth.

4.  Bring broth to a boil, reduce heat to a simmer, cover and cook for 30 minutes.

5.  Serve

This is so yummy and such an easy way to make the most of your holiday dinner.  If you prefer a heartier soup, add gluten free brown rice fettuccine noodles.
