Emma’s Cashew Celery

You almost can’t get any more simplistic.  You will find yourself craving this easy dish of celery and cashews after you have it once.  We are grateful to our dear Chinese guest teacher, Emma, who shared it with us. It has become a regular in the weekly rotation.

 

INGREDIENTS

  • 1 bunch of celery
  • sea salt
  • 1-2 teaspoons grape seed or olive oil
  • 3/4 cup cashews, whole
  • 2 tablespoons Tamari

DIRECTIONS

  1. Slice celery diagonally.
  2. Lightly sprinkle celery with sea salt.  Let sit for 5 minutes.  (This makes a world of difference in this dish!)
  3. Heat grapeseed oil or olive oil on medium to high heat in a pan or wok.
  4. Throw in celery.  It should sizzle loudly.  Cook for 2 minutes, stirring occasionally.
  5. Stir in Tamari.  Continue to cook 1 minute.
  6. Stir in Cashews, cook for 30 second to 1 minute and then take off the heat immediately.
  7. Quickly move to a serving dish.
  8. Enjoy.

*This has become a “go to” favorite in our house when the pantry is bare.  We almost always have celery and cashews.  It is light and packed with a good amount of protein.  We recently had the opportunity to house a Chinese guest teacher in our home.  One of the highlights of her being with us is learning some wonderful traditional Chinese cooking.  This is one of those recipes.  So easy and surprisingly satisfying.

*This dish is better under cooked than over cooked.

*This cashew celery dish is Paleo friendly.  An inexpensive source of protein and fast and easy to prepare!
