Au Gratin Potatoes

Creamy cheesy goodness!  This is a unique way to make au gratin potatoes.  It takes a little more time to fry up the potatoes but it is well worth the extra time.  Serve as a main dish or as a side.”

 

INGREDIENTS 

  • 2 tablespoons extra virgin olive oilAu Gratin Potatoes 2
  • 8 large red potatoes thinly sliced, 1/4″ thick (I use a food processor with the medium thickness slicing blade)
  • garlic salt
  • dried parsley
  • 1 (16 ounce) can condensed cream of mushroom soup
  • 1 pound of cheddar cheese shredded
  • ½ pound cooked ham cubed

DIRECTIONS

1.  Preheat oven 375 degrees.

2.  Pour 2 tablespoons cream of mushroom soup to coat a 9”x13” baking dish.

3.  Heat oil in a warm skillet, add a third of the potatoes then garlic salt them to taste.  Fry potatoes until tender and browned.  Continue frying the rest of the potatoes, remember to garlic salt them and add parsley.

4.  While frying potatoes shred the cheese and cube the ham.

5.  Add cooked potatoes to baking dish, half of the ham, and cheeseAu Gratin Potatoes 3

6.  Add one more layer of everything finishing with potatoes and cheese.

7. Put into oven and bake for 45 minutes.

Chef Notes:

*For an extra kick add 6 ounces chopped pickled jalapenos on top.  Omit the ham to make a vegetarian meal.  Why do we use red potatoes?  Because they have a lower glycemic index.   Red potatoes have half the calories and half the carbohydrates  as compared to a russet potato.  Plus they have a sweeter flavor.
